Italian cheesemaking, artisanal skills, and a delicious tasting.

Julien and the Latteria team welcome you into their urban dairy to help you discover the secrets of traditional Italian cheesemaking. During this workshop, you will learn to make your own mozzarella and mozzarella braid using buffalo milk from a farm in Auvergne.

You start by discovering the different stages of cheese production, from curd preparation to instant cooking, as well as breaking up the curd. The team will explain the role of each technique and support you throughout the transformation.

Next, time for shaping! You will learn how to stretch the curd to achieve mozzarella's signature texture, then create a braid. You will also discover the "mozzare" technique, which gives mozzarella its iconic round shape.

To end the workshop on a convivial note, you will enjoy a tasting of Italian delicacies, featuring cured meats and cheeses, accompanied by a drink.

At the end of the workshop, you will leave with a 150 g mozzarella ball and a 150 g braid, made during the session and ready to enhance your next aperitifs or meals.
