9 cm Paring Knife - Hashi Tsuchime Collection

The paring knife is the second most commonly used knife, just after the chef’s knife. It is extremely useful for precision tasks away from the chopping board. The paring knife can also be used to peel food.

The KOTAI paring knife has an ideal hybrid shape, combining an almost flat cutting edge for maximum precision with a very fine tip for detail work.

Japanese molybdenum stainless steel, thanks to its higher-than-average carbon content, helps the blade retain its sharpness for longer than ordinary knives. The addition of chromium to the steel alloy makes the blade stainless, easy to use and easy to maintain.

Beyond its aesthetic appeal, the “Tsuchime” (槌目) hammering on the blade creates small air pockets between the blade and food slices.

This ancient Japanese method prevents food from sticking to the blade for pleasant, quick cutting.

Made in Seki, Japan’s knife-making capital, renowned worldwide for its high-quality blades and 800 years of forging expertise, each Hashi knife is a symbol of minimalist culinary craftsmanship, offering a cutting experience that is as refined as it is functional.

HASHI - KOTAI’s new collection

Awaken your creativity in the kitchen with KOTAI’s new Hashi (橋, bridge) knife collection. Essential, accessible and designed for easy maintenance, this range embodies simplicity and is ideal for passionate cooking enthusiasts.

Made in Seki, Japan’s knife-making capital, world-renowned for its high-quality blades and the expertise of its blacksmiths for 800 years, each knife is a symbol of minimalist culinary craftsmanship, offering a cutting experience that is as refined as it is functional.

Inspired by its motto, “A bridge to go beyond”, the Hashi collection draws on the different forms taken by water and applies this allegory of “water adapting to its environment” across all its knives to highlight their versatility. It is therefore available in three distinct editions: Classic, Tsuchime and Damascus, with each knife carefully designed to offer you a unique experience tailored to your different culinary needs.

Hashi Tsuchime range

As its name suggests, the Hashi Tsuchime range offers Japanese knives in stainless molybdenum steel, whose hammered blade (槌目 “tsuchime”) echoes the pebbles in waterways, particularly those of the Itadori River in Seki.

In addition to its aesthetic appeal, the hammering makes quick cutting easier thanks to small air pockets that prevent food from sticking to the blade.
