Although I am myself a fan of white tableware, for Désirée, I wanted to add this little note of softness in the form of a warm rosy hue, explains the great pastry chef Roger Van Damme. The golden rim is meant to accentuate this sense of luxury in patisserie, without tipping into kitsch.
